Olive oil production is another facet of the estate's commitment to diversity and quality. It completes the Castellu di Baricci experience, bringing a touch of variety to the estate's offering, while remaining faithful to the spirit of family tradition.

Born under the leadership of Paul and Laurence Quilichini during the restructuring of the estate, this 8ha olive grove aims to complement the vines and thus forms with the latter an agricultural reality in the image of Mediterranean cultures. Planted with local varieties: Ghjermana and Zinzala, the olive grove follows a qualitative approach by meeting the criteria of the Oliu di Corsica PDO and organic farming.

From the olive tree to bottling

perfect control of the entire process

When the olive turns black in the fall, the harvest is done manually using mechanical combs and nets placed at the foot of the tree. This is the so-called gaulage technique. The olives are then immediately pressed at the farm's mill and the oil is stored in stainless steel tanks protected from any oxidation.

The oil mill, U fragnu in Sartenais, is located on the farm and allows complete control of the olive transformation process.

From pressing to bottling, including storage, the estate gives itself the means, with this modern tool entirely in stainless steel, to meet its quality requirements while respecting an age-old tradition. All our oils meet the specifications of the PDO Oliu di Corsica and those of organic farming.
